By this logic I could rob a bank and use footage from another day of me not robing the bank as evidence to exonerate myself.

The video you provided shows you using Vanilla client as far as I know however, this does not excuse what was mentioned above. Icons can be easily replaced as well so DON'T EVER think that I am with you on this one.
Another thing - you have mentioned an awful lot of features of a possible hacked client which pretty much just tells me that if you have "knowledge" about these things. then it won't be hard for you to find an external hack especially with the help of our friend google.
it was obs I showed that in video, also only 1 Minecraft client was open, unlike hacked clients which require 2, I pressed esc and opened my inventory, what else could I have of done to prove that I didnt hack?

Never in my life I have seen a hacked client that requires 2 instances of the application must be running in order to hack.
Honestly, it won't be easy for you to prove that you did not hack. What I suggest you should do is just move on and prove yourself along the way.
