Hey there,
I'm glad you decided to come back to meep. Yes, they took down the sell shop because that caused a huge inflation in the other economy. In the new gamma towny server, the server has decided only to set a price for gold, which you can exchange at /warp bank . Everything else fluctuates in the player market. This encourages players to exchange more items for a price they can agree on instead of selling to the server on a fixed price. Jobs were taken down because "it was broken" and such, and we don't really know the real reason to why it was taken down, but the possible cause could be that too many people profited off of the farmer job that it introduced a ridiculously large amounts of money into the economy. Because of that, people quit farming and went to mining, for instance, diamonds. That's why the prices of ores/minerals are so low, aka the usual Minecraft deflation. Therefore, it is hard to sell items, especially ores/minerals at a fixed price because the price always fluctuates with the economy. I hope that helped you get to know the current situation right now.
Now, onto making money. Different people have different ways of making money, and that was the intention of Gamma. Now, no one wants others copying their businesses and become competitors, so it will be hard to get people to tell you how they make money.
Here are some options:
- Mining, like you said: You can sell some ores/minerals at my shop in /pwarp market if you wish, or other sell shops. Like you said, there will be no guarantee as to if the chest shop will be full or not, but I can almost always empty the chests for my shops. You can always try to sell it on vshop for 5-20% lower than the lowest price out there, and they will probably sell, however no guarantees on that either. This is true for all items.
- Farming: You can make a multi-floor farm, or use /pwarp freefarm to farm some wheat/potato/carrot and sell it at /pwarp convenient or /pwarp crops (coming soon) or other sell shops owned by players
- Woodcutting: You can chop wood and sell it at /pwarp market or other sell shops. You can also sell this on vshop for a pretty good price. Jungle log, Dark oak log, and Spruce log are the easiest to chop therefore the cheapest to sell. Oak is the most expensive since it is a pain to chop down.
- Plot clearing: You can clear plots for someone. This can be just tearing down an old house, or maybe clearing a chunk of stone underground. You will need a close to god or a god pickaxe+shovel for this. If you need some you can always order one for the cheapest price at /pwarp enchantment , or from other businesses. You should get 1k-3k for this, but some players may give you more. It depends on how much of a pain it is.
- Building: If you are good at building, you can be hired by people for a pretty good price. It depends on the size of the build by sometimes you can sell them designs too. Note that fly notes are very expensive and rare.
- General Labor: if you are not good at building, you can still help build and make money. Just follow your employer's orders and you will make fine money.
- Redstone technican: if you are good at redstone, you can help build various redstone devices, or just sell designs.
- Town owning: you might be able to make money off of resident taxes, however this is very hard since the majority of new players quit.
- Gambling: not recommended, but if you are lucky you can win from slots such as /pwarp slots and /pwarp win , or just by dicing. Play responsibly.
There are some easy jobs to get started with. Just experiment see what you like. I hope that helps you make meebles!
EDIT:
I made 1.8mil running "Scam" (@Natsu ) casino, but if you wanna make money, try trolling, I made 300k+ in a week from it.

Also yeah, you can own casinos and get hated, or abuse bugs, or scam in general and hopefully not get banned.
This is strongly not recommended.
